Louisiana Crawfish Time’s Roots Began Back in 1995, While Still in My Senior Year At Usl. I Co-Founded One of Lafayette's First Drive Drive Thru Crawfish Establishments. Five Years Later I Sold My Share in That First Venture and Opened Louisiana Crawfish Time. the Timing Was Horrible; 2000 Was the Worst Crawfish Season in History. However, I Knew That Our Crawfish Were Unmatched in Taste and Quality. I Was Confident That If the Restaurant Could Make It Through This Very Difficult Year It Would Be A Huge Success. Many Years of Hard Work and A Commitment To Serving Quality Products Have Made Us One of Acadiana's Favorite Boil Houses.
